Caracteristici generale
Folosirea SO2 in vinificatie se bazeaza pe anumite proprietati ale sale:
la temperatura ambianta (20 ± 5°C) SO2 este un gaz incolor, mai greu decat aerul, cu gust acru, miros intepator, sufocant si iritant.
In concentratie de 0,015% irita caile respiratorii, iar in concentratie de 0,05% poate provoca accidente mortale.
Folosirea SO2 in vinificatie se bazeaza pe:
• actiunea sa antiseptica, antioxidanta si antioxidazica;
- realizarea unei bune limpiditati;
- conservarea aromei si imbunatatirea calitatilor organoleptice a vinurilor;
- contribuie la extractia substantelor colorante si odorante in timpul macerarii-fermentarii.

Actiunea antiseptica, consta in faptul ca poate distruge sau inhiba, pentru o anumita perioada de timp, activitatea si respectiv dezvoltarea microorganismelor (levuri, bacterii, mucegaiuri) din must si vin.
Actiunea antioxidanta se datoreste fenomenului ca SO2 este reducator puternic (fixator de oxigen), ce protejeaza musturile si vinurile impotriva oxidarii.

Aceasta actiune se exercita pe mai multe planuri si anume: distrugerea enzimelor oxidoreducatoare ce catalizeaza reactiile de oxidare, combinarea lui cu substante usor oxidabile si combinarea lui cu oxigenul.
Actiunea antioxidazica se refera la capacitatea bioxidului de sulf de a distruge sau inactiva enzimele oxidative prezente in must sau vin.
Proprietatile fizico-chimice ale SO2 permit utilizarea sa sub mai multe forme si anume: gazoasa, lichefiata, solutie apoasa si in forma solida, ca saruri.
Bioxidul de sulf sub forma gazoasa utilizarea SO2 sub aceasta forma se practica frecvent la dezinfectarea localurilor vinicole, la dezinfectarea si conservarea butoaielor din lemn si indirect la sulfitarea mustului si vinului.

Pentru dezinfectarea localurilor (crame, pivnite) se folosesc bulgari de sulf, care se ard in tavi de tabla asezate pe pardoseala incaperilor. In acest sens se folosesc 50 ÷ 60 g sulf (pucioasa) la 100 m3 spatiu.
Pentru dezinfecatrea vaselor goale se utilizeaza fitile confectionate din benzi de hartie sau azbest, acoperite cu un strat subtire de sulf, sau rondele de sulf.
Fitilele (fasiile) de sulf se pregatesc prin trecerea benzilor prin sulf topit la aproximativ 300°C; un fitil contine 2,5 ÷ 3 g sulf, prin arderea caruia se obtin 5 ÷ 6 g sau 1,7 ÷ 2 litri SO2 gazos.

Rondelele de sulf sunt confectionate dintr-un amestec de pulbere de sulf cu un liant, contin o cantitate de 5 ÷ 10 g sulf, care genereaza prin ardere 10 ÷ 20 g SO2.
Cantitatea de sulf necesara arderii in vase in vederea dezinfectarii si conservarii lor variaza de la 0,2 ÷ 0,3 g/hl din capacitatea vasului, pentru vasele mari (peste 50 ÷ 60 hl) pana la 2 ÷ 3 g/hl pentru vasele mici de 200 ÷ 300 lit.
Teoretic, prin arderea unei cantitati de sulf trebuie sa rezulte o cantitate dubla de SO2, conform reactiei:
S + O2 SO2
Practic insa numai 2/3 sau 3/4 din sulf se transforma in SO2, restul reprezentand pierderi datorate impuritatilor, formarii de SO3 sau arderilor incomplete.
Bioxidul de sulf sub forma lichefiata; Acesta se obtine prin racirea si comprimarea SO2 gazos in tuburi (butelii) din otel ) la o presiune de cel putin 2 atmosfere.
Un litru de SO2 lichefiat degaja circa 500 l SO2 gazos la presiune normala.
Sub aceasta forma, SO2 are o puritate ridicata, este economic si permite totodata cunoasterea exacta a dozelor incorporate.
SO2 lichefiat se livreaza in butelii din otel care contin 50 ÷ 70 kg SO2.
Administrarea in vin se poate face direct din butelie sau prin intermediul unor aparate dozatoare, cunoscute sub numele de sulfitometre.
In primul caz, folosit la sulfitarea unor cantitati mari de vin, butelia se aseaza pe un cantar zecimal.
Dupa echilibrarea acestuia se indeparteaza greutatile corespunzatoare dozei ce trebuie introdusa in vin, se deschide robinetul si cand balanta a ajuns din nou la echilibru se intrerupe sulfitarea.
In cazul volumelor de vin mai mici, transvazarea, masurarea si introducerea de SO2 se face cu ajutorul sulfitometrelor care sunt de diferite tipuri constructive.
In general un sulfitometru este format dintr-un rezervor (cilindru) din sticla gradat (grame de SO2), protejat de o camasa metalica si de 2-3 robineti prin a caror manipulare aparatul se incarca si se descarca.
Umplerea sulfitometrelor se face cu SO2 lichid, motiv pentru care butelia, in timpul umplerii, trebuie sa stea in pozitie orizontala; Cand in vin se introduce SO2 in stare gazoasa direct din butelie, aceasta sta tot in pozitie orizontala dar cu tubul de evacuare spre partea superioara.
O pozitie sau alta este marcata la exterior printr-un reper de pe capacul buteliei.
Din butelie sau sulfitometru, SO2 se introduce in vin cu ajutorul unui furtun, suficient de lung, elastic, rezistent, prevazut la un capat cu o greutate, pentru a-l mentine la nivelul dorit.

The sulphitometer has a stand and a handle for carrying that can be used to hang the unit onto a rail. The unit is a tested and certified stainless steel pressure vessel.

10 KG & 18 KG SULPHITOMETERS The body that holds the liquid sulphur dioxide is made from G316 stainless steel with a sight glass tube (Borosilicate glass) that runs down the length of the body and is covered by a polycarbonate safety cover. The gauge strip reads in 50gm increments and the liquid sulphur dioxide is dispensed through a stainless steel needle valve and/or a diaphragm valve at the bottom. The sulphitometer is bolted to a stainless steel trolley with 250mm diameter pneumatic tyres. The 10kg & 18kg units are tested & certified stainless steel pressure vessels.

Optional accesories
The ‘Stainless Steel Braided Filling Line’ pressure rated at 17mPa is 1.1m long and fits all models; this line is used to fill the sulphitometer from the main supply bottle.
The ‘Filling Line Bleed Assembly’ fits all models and is used to safely drain the residual trapped liquid left in the braided filling line after filling the sulphitometer. It is bled off into a container of water before unscrewing the braided filling line from the sulphitometer.
The ‘Small Diffuser Line’ consists of 2m of EPDM rubber hose, a small diffuser and fittings and is recommended for use with the 300gm & 1kg models. The diffuser on the end is dropped into the wine from the top of the tank and diffuses the liquid sulphur dioxide evenly throughout the wine.
The ‘Large Diffuser Line’ consists of 5m of EPDM rubber hose, a large diffuser and fittings and is recommended for use with the 3kg, 10kg & 18kg models. The diffuser on the end is dropped into the wine from the top of the tank and diffuses the liquid sulphur dioxide evenly throughout the wine.
Extra EPDM hose is available per metre.
The ‘Sulphur Dosing Wand’ is used for dosing barrels, it has a 1m stainless steel braided line that feeds a spring loaded stainless steel toggle valve then to a 1/4”stainless steel dosing tube. The length of the braided line can be changed to suit your application; the braided line is rated to 17mPa and fits onto all of our sulphitometers from 300gm to 18kg. The tube is lowered into a barrel and the toggle is pressed releasing liquid sulphur dioxide until the toggle is released.
The ‘Tank Sparging Spear’ is used for dosing tanks through a side valve at the bottom of the tank; it has a diffuser on one end and a check valve on the other end. It is offset to pass beside the disc in a butterfly valve and has a 2m stainless steel braided line with a purging tee. The purging tee is used to attach nitrogen gas to the line to clear the spear of liquid sulphur dioxide and help mix the tank before disconnecting the liquid sulphur dioxide. The spear is used in place of the diffuser lines and therefore is a safer method of dispensing the liquid sulphur dioxide. The spear can also be used for sparging gas into a tank by changing the diffuser with a sinter.
